1. In a bowl mix together all the ingredients for the pie crust. If you are baking the crust add an egg. If you are making a no-bake crust leave the egg out.
2. Press the dough into the bottom and sides of a pie pan using the palms of your hand. If baking the crust be sure the grease the pan with a bit of olive oil before adding the crust.
3. Next, use a fork to prick the bottom of the crust several times so that the crust can vent while baking. This will keep the crust from bubbling up. Cover the edges in foil, fill the crust, then bake for 15 minutes at 180 degrees C/350 degrees F. Let the pie cool and serve. If making a no-bake crust, place the crust in the refrigerator to harden while you make the filling. Then fill and chill in the refrigerator until ready to serve.

1. Preheat oven to 350 F and place the rack in the middle position. Place a 9- inch pyrex pie plate in the freezer. Mix egg white with water.
2. Measure the dry ingredients into the bowl of a food processor and pulse to combine. Add the cubed cold butter and pulse until the butter is pea-sized. Drizzle the egg white around the bowl of the crust ingredients and pulse until the dough comes together.
3. Place a new piece of cling film on the counter. Unwrap the pie crust dough and place it on the center. Place another piece of cling film on top of the dough. With a rolling pin, and starting at the center, roll the dough away from yourself. Give the dough a quarter turn and roll away from your self again. (If the cold dough crumbles a bit, don't worry, the rolling will warm it up and it will press back together.) Do this several times, flipping the whole pie crust over and proceeding with the other side until you have a 12 inch round disc. Place the crust in the freezer for 3-5 minutes or the refrigerator for 15 minutes.
4. Remove the pie plate from the freezer and place on your work surface. Remove the rolled crust from the freezer or refrigerator and peel-off the top piece of cling film. If the dough is stiff as a board, let it sit for a minute on the work surface.

1. Line the bottom of a 9 inch pie plate with a circle of parchment paper. (I just trace it and cut it out, using cooking spray to adhere it down.)
2. In a large bowl, mix together your almond flour, tapioca starch, coconut flour, monkfruit and salt.
3. Cut in the butter, until it is broken down into pea-sized balls and the mixture is crumbly, almost like very thick streusel crumbs. I prefer to use my hands for this, but you could also use a pastry blender or a food processor!
4. Add in the egg yolk and ice water and use your hands to mix until it forms a ball, making sure you get that egg yolk nice and mixed. Pat it into a disc, wrap with saran and chill for at least 2 hours

4. To bake a filled pie, pre bake 10-12 minutes before adding fillings. You may need to cover the edges in foil to avoid over-browning. Let the pie crust cool before adding fillings and baking again.

2. In a mixing bowl, whisk or use a fork to mix together the almond flour, baking soda, ground cinnamon.

4. After chilling, roll out dough onto the same surface with an additional layer of parchment on top (this will help you avoid using extra flour and handle the dough more easily). Work quickly and keep dough cold, as it is quite delicate.
